Soya sauce are probably the most know Ned sauce in the Chinese kitchen but what makes it really special besides the wonderful taste is "how it is made". The process can take up to 2 years time in which the soya grains are fermented together with dregs and flour.
Brown sugar is a product made out of sugar cane; it's a little wet and it is often used in baking sweets.
Oyster sauce main ingredient is soya sauce but it is thicker even then fish sauce. It is made out of oysters, salt, starch, soya sauce and toffee.
Vinaigrette rice is not very popular in Europe but well-knew in China were it can be found in 3 different brands: black, white and red. It's less acid then the autochthonous but the flavor makes it very special.
